Ingredients

Preparation procedure

  • Preparing the starter and dough: Crumble the fresh yeast into lukewarm milk, add the sugar and let the starter rise for 5–10 minutes. (If you're using dried yeast, you can add it directly to the flour.) Add the flour, salt, oil, lukewarm water and the prepared starter to a bowl. Knead into a smooth dough that doesn't stick to your hands.
  • Proofing: Cover the bowl with a clean cloth and let the dough rise in a warm place for about 1 hour, until it has doubled in size.
  • Shaping the langos: Tear off smaller pieces from the risen dough and shape them with your hands into flat rounds. The center should be thinner and the edges slightly thicker – this helps the langos puff up nicely when frying.
  • Frying: Heat a sufficient amount of oil in a deep pan. Fry the langos on both sides until golden and crispy. After removing them, let them drain on paper towels.
  • Serving: Traditionally, langos are served rubbed with garlic, topped with sour cream and sprinkled with grated cheese. They are also great with tartar sauce, ham, vegetables or even sweet – for example with Nutella and fruit.
