I have had this recipe for an Egyptian cake for more than 25 years and my guests always praise it. It is a layered cake with three sponges, a rich cream and crunchy whipped cream, ideal for celebrations or special occasions. Although its preparation requires a bit of time and care, the result will surely surprise you with its perfect taste.

Preparation procedure

  • Preparation of the cream: Place the egg yolks, sugar, flour, vanilla sugar and milk into a saucepan. Mix the mixture thoroughly and bring to a boil over low heat. As soon as a light foam begins to form, remove the pan from the heat and stir occasionally. Gradually add the butter, cut into pieces, to the cooling mixture and stir until it melts. Finally, beat the cream thoroughly with a mixer until smooth.
  • Preparation of the sponge batter: Whip the egg whites into foam and gradually add the sugar until a glossy, firm meringue forms. Then gently fold in the flour and ground walnuts until a thicker batter forms. Pour the batter into a round pan and bake at 170 °C for about 20 minutes. Repeat this step three times, or mix all the ingredients at once and bake one large sponge, which you then cut lengthwise.
  • Caramelized sugar: Slowly melt the sugar in a pan until it becomes caramel. Pour it onto baking paper and let it cool. Then crush the caramel with a rolling pin into smaller pieces.
  • Crunchy whipped cream: Whip the cream until stiff and mix it with the chopped nuts and crushed caramel.
  • Assembling the cake: Spread a layer of cream on the baked sponge and then a layer of the crunchy whipped cream. Place the second sponge on top and repeat the process. Finally, spread only cream and crunchy whipped cream on the top sponge. You can decorate the cake with chopped nuts and pieces of caramel.
