Štědrák is a cake that was once baked mainly at Christmas and Easter as a symbol of abundance. It combines four favorite fillings – poppy seed, walnut, curd and plum jam – and the result is a wonderfully moist, rich dessert that will scent the whole home. If you want to prepare something truly festive, this recipe is exactly that. I offer you a tried-and-true method that ensures the Štědrák turns out perfectly every time.

Preparation procedure

  • Preparing the starter and dough Crumble the yeast into the warm milk with a tablespoon of sugar and let it activate for 10 minutes. Meanwhile, in a bowl mix the flours, the remaining sugar, salt and egg yolks. Add the melted lukewarm butter and the starter. Work into a soft, smooth dough. Cover with a cloth and let rise for 60 minutes.
  • Fillings Prepare each filling separately: Poppy seed and walnut: mix the ingredients, gradually add hot water – the consistency should be thick but spreadable. Plum jam: combine the plum jam with the sugar and rum. Curd: mix all the ingredients into a smooth cream.
  • Assembling Štědrák Divide the risen dough into five parts – four for the layers and the fifth for the lattice or top. Roll out the first portion to the size of the baking tray, place it on the bottom and layer in order: plum jam, poppy seed filling, curd filling, walnut filling Cover each layer with a thin sheet of dough. From the last portion you can create decorative strips or cover the whole surface. Brush the surface with a beaten egg.
  • Baking Bake in a preheated oven for 45–50 minutes at 180 °C until golden. Let cool so the fillings set and it slices better.

Tips and variations
