Need to quickly bake a sweet finish for coffee? This “lazy” honey cake resembles gingerbread, yet it’s ready without lengthy rolling and layering. You can make the base in half an hour and easily adjust the cream to taste – from a lighter sour cream version to an airy whipped-cream variant.

Preparation procedure

  • Honey base: Mix the honey with the baking powder and briefly warm over low heat until it starts to foam. Remove immediately from the heat.
  • Eggs to a foam: Whisk the eggs with the sugar until light, thick and foamy.
  • Combining the batter: Fold the still-warm honey into the egg foam in portions. Gradually work in the sifted flour until a smooth batter forms.
  • Baking: Spread the batter into a tin lined with parchment paper (approx. 25×35 cm). Bake at 180 °C for 30–40 minutes until golden. Let cool completely.
  • Cream: Whip the chilled cream until stiff. In another bowl mix the sour cream with the powdered sugar, then gently combine with the whipped cream into a smooth cream. Sweeten to taste.
  • Assembly: Slice the cooled cake base lengthwise into 2–3 layers. Spread cream on each layer and stack them. Cover the top and sides with cream as well.
  • Finishing and chilling: Sprinkle with nuts or crumbs and let firm up in the fridge for several hours, ideally overnight.
