Preparation procedure

  • Příprava lineckého těsta Sift the flour into a bowl, add the cold butter cut into cubes, powdered sugar and a pinch of salt. Quickly work it in with your fingers or a knife until the mixture has a crumbly consistency. Add the egg yolk and quickly knead the dough — it must not warm up. Form a ball, wrap in plastic wrap and refrigerate for at least 30 minutes (ideally 1 hour).
  • Příprava ořechové vrstvy Beat the butter with the powdered sugar until fluffy, add the rum and lemon zest. Fold in the ground nuts. If you want a lighter filling, gently fold in the lightly whipped egg whites. The mixture should be dense, spreadable, but not runny.
  • Sestavení a pečení Preheat the oven to 180 °C. Roll the dough out to the size of the baking tray (e.g. 30×35 cm), transfer to a tray lined with baking paper, and prick with a fork. Spread the nut layer evenly. Bake for 20–25 minutes until golden (watch to prevent the edges from burning).
  • Poleva a finalizace Whisk the egg yolks with the powdered sugar until light and airy, then stir in the rum. Immediately after removing the hot baking tray from the oven, spread the glaze evenly over the surface. The glaze will slightly set on the warm dough and create a glossy surface. Let cool, then refrigerate for at least 3–4 hours, preferably overnight, to allow the layers to "settle".
  • Krájení a servírování Use a sharp knife (preferably warmed in hot water), cut into squares approximately 3 × 3 cm or as needed. Serve with tea or coffee.
