Preparation procedure

  • Cocoa dough: In a bowl, mix the flour, cocoa and baking powder. Add the softened butter, milk and sugar. Work into a smooth dough and roll it out to the size of a baking dish with high sides. Spread the dough evenly over the bottom of the pan.
  • Quark filling: Mix the quark with the sugar and egg yolks. If the mixture is too stiff, thin it with cream or milk to make it creamier. Spread the filling evenly over the prepared cocoa dough.
  • Sponge batter: Whip the egg whites into stiff peaks. Gradually beat in the sugar, then add the yolks, hot water and oil. Finally, gently fold in the flour mixed with the baking powder. Pour the sponge batter over the quark layer and smooth carefully.
  • Baking: Preheat the oven to 175 °C (top and bottom heat). Bake the cake for approximately 35 minutes, until the surface turns golden. Let it cool completely before slicing.
