The key is quick handling of the dough and sufficient chilling so the cookies don’t spread during baking and remain wonderfully crisp.

Preparation procedure

  • Preparing the dough Sift the flour and powdered sugar into a bowl. Add the cold butter cut into pieces, the egg yolks and the lemon zest. Quickly work into a smooth dough – do not overwork, otherwise it will be dry after baking.
  • Resting the dough Shape the dough into a disc or a log, wrap in cling film and chill in the refrigerator for 1 hour.
  • Shaping Let the dough relax briefly, roll it out between two sheets of baking paper to a thickness of 3–4 mm. Cut out your favorite shapes – always the same number of solid rounds and rounds with a hole in the middle.
  • Baking Transfer to a baking sheet lined with parchment paper. Bake in a preheated oven at 190 °C for 9–10 minutes. As soon as the edges begin to lightly brown, remove the tray and let the cookies cool on the tray.
  • Assembling Join the cooled shapes with jam – full round on the bottom, the round with a hole on top. Finally dust with powdered sugar.
