Traditional tart with crisp Linzer pastry and a delicate quark filling, flavored with lemon zest and vanilla sugar. An ideal accompaniment to afternoon coffee or tea.

Preparation procedure

  • Preparing the dough: In a large bowl sift the flour with the baking powder, add the powdered and vanilla sugar, lemon zest, butter cut into cubes, the egg and the yolk. Quickly work into a smooth dough. Divide it into two portions, wrap in cling film and let rest in the refrigerator for 30 min.
  • Preparing the filling: In another bowl mix the quark with the egg yolk, granulated sugar, vanilla sugar and lemon zest until a smooth cream forms.
  • Assembling the cake: Preheat the oven to 180 °C. Roll out the first portion of chilled dough on a baking tray (approx. 25 × 35 cm) lined with baking paper. Spread the quark filling evenly over it. Roll out the second portion of dough and place it on top of the filling. Gently press the edges together and prick the dough several times with a fork.
  • Baking: Place the tray in the oven and bake for 30–40 min, until the edges and surface turn golden.
  • Finishing: After removing from the oven let the cake cool completely. Before serving you can lightly dust with powdered sugar.
