Liqueur cookies are an ideal choice for anyone rushing with Christmas baking but who also wants to offer an original sweet with a subtle alcoholic aroma. The egg liqueur goes straight into the dough, which makes the cookies wonderfully crisp, and the buttery liqueur cream gives them a pronounced scent and delicious texture. Moreover, they don’t need a long resting time — one day after assembling is enough and they’re ready to serve.

Preparation procedure

  • Dough Sift the flour together with the baking powder onto the work surface. Add the powdered sugar, vanilla paste and lemon zest. Make a well in the center and add the yolk, liqueur and the softened butter cut into cubes. Quickly work into a smooth dough, wrap it in cling film and chill for at least 30 minutes.
  • Shaping Roll the dough out to about 3 mm thickness. Use round or star-shaped cutters to cut out shapes. Cut a small hole in the center of half of them. Transfer to a baking sheet lined with parchment paper.
  • Baking Bake in a preheated oven at 180 °C for 9 minutes until lightly browned. Let cool completely and store in a box in a cool place.
  • Liqueur cream Place the eggs and sugar in a heatproof bowl and whisk over a gently simmering water bath until thickened. It takes 5–8 minutes. Leave to cool completely to room temperature. Whip the butter until fluffy, add the vanilla sugar and then gradually beat in the cooled egg mixture in portions. Finally fold in the egg liqueur. The cream should have a smooth, buttery texture.
  • Assembling Spread cream on the solid shapes and top with the shapes with holes. Press lightly. Let the finished cookies rest in the fridge for 24 hours.

Yield: 30–40 pcs (depending on the size of the cutters)
