London slices are a wonderfully delicate dessert with a pronounced nutty flavour and a delicious layer of currant jam. They are prepared quite simply, but the result feels truly festive. Ideal for family celebrations, visitors or just with coffee over the weekend.

Preparation procedure

  • Combine the flour, baking powder, sugar, egg yolks and softened butter to form a smooth dough, wrap it in cling film and refrigerate to rest.
  • Whisk the egg whites into stiff peaks. Gradually whip in the powdered sugar, add the vanilla sugar and finally gently fold in the ground walnuts.
  • Roll the dough out to the size of the baking tray (approx. 30 × 40 cm), transfer to a greased and floured tray. Spread a layer of currant jam and evenly spread the prepared nut meringue on top.
  • Bake first for 15 minutes at 180 °C. Then reduce the temperature to 170 °C and bake for another 15 minutes, until the surface is lightly golden.
  • Let cool completely and cut into slices with a serrated knife.
