Moravian koláčky are a traditional Czech dessert that disappears from the table immediately. This recipe is a guaranteed family treasure that will give you moist and delicious koláčky with curd, poppy seed and plum jam fillings. They are great for celebrations, but also for a relaxed cup of coffee.

Preparation procedure
- Preparation of the starter: In a little lukewarm milk dissolve the yeast and sugar, and let the starter rise.
- Preparation of the dough: Sieve the flour into a large bowl, add the eggs, salt, the remaining sugar, lukewarm milk, melted Hera and the risen starter. Mix everything thoroughly and work into a smooth dough. Let the dough rise for approximately 1 hour in a warm place, until it doubles its volume.
- Shaping the koláčky: After rising divide the dough into smaller pieces and shape them into balls. Lightly roll each ball into a disk, fill with the curd filling with raisins and wrap again into a ball. Place the balls on a baking sheet lined with parchment paper, leave space between them because they will rise again. Make a depression in the center of each ball, brush with beaten egg and fill with various fillings according to taste. Sprinkle with the crumble.
- Baking: Preheat the oven to 180 °C. Bake the koláčky for 15–20 minutes, until they turn golden. Every oven bakes a bit differently, so check them periodically.
