Preparation procedure

  • Dough preparation: Separate the egg whites from the yolks. Whip the egg whites to stiff peaks and gradually beat in the sugar until it dissolves. Lightly beat the yolks with a pinch of salt and add them to the egg whites. Finally gently fold in the sifted flour – ideally with a spatula from the bottom up so the batter remains airy.
  • Baking: Prepare a baking tray about 25 × 35 cm – grease it and dust with flour, or use baking paper. Spread the batter evenly and bake in an oven preheated to 170 °C for about 25 minutes. Then let the cake base cool completely.
  • Cream: In a small saucepan mix the ground walnuts, sugar and starch. Pour in the milk and heat over low heat until the mixture thickens. Let it cool completely and then whisk in the softened butter. Spread the resulting cream over the cooled sponge cake base.
  • Chocolate glaze: Melt the chocolate with the milk in a water bath. Let it cool slightly, but while still liquid pour it over the cream. You can decorate the surface, for example by creating a wavy pattern with a fork. Chill the cake in the refrigerator for at least 30 minutes to set.
