- Preparing the vegetables: Cut the cauliflower into small florets. Grate the carrot and chop the celery into small pieces.
- Cooking the vegetables: Place the cauliflower, carrot and celery in a pot and pour in the broth or water with the bouillon. Bring to a boil, then reduce the heat and let simmer for 12–15 minutes, until the vegetables are tender.
- Preparing the creamy mixture: In another saucepan over low heat melt the butter. Stir in the flour, a pinch of salt and pepper. Gradually pour in the milk, stirring constantly, until the mixture begins to thicken (about 2 minutes).
- Finishing the soup: Reduce the heat and stir the grated cheese into the milk mixture. Remove the mixture from the heat and stir it into the pot with the vegetables. Mix well and, if necessary, season with salt, pepper or paprika.
- Serving: Serve the soup hot, ideally with crusty bread or croutons.
