If you want to enjoy homemade doughnuts without unnecessary frying in oil, this baked doughnut recipe is perfect for you. They are soft, fluffy and very tasty. In addition, they are not soaked in oil, so they are a slightly healthier alternative to traditional doughnuts.

Preparation procedure

  • Preparation of the sponge: Warm half of the milk, add the crumbled yeast and 1 tablespoon of sugar. Let the sponge rise.
  • Dough preparation: Sift the flour into a large bowl, add the salt, remaining sugar, egg yolks, melted butter, the remaining milk and the sponge. Work into a smooth, pliable dough. Cover with a cloth and let rise in a warm place for about an hour.
  • Further rising: After an hour, knead the dough again, cover and let rise for another 30–60 minutes.
  • Shaping the doughnuts: Turn the risen dough out onto a floured work surface and roll it into a sheet about 2 cm thick. Use a glass or a round cutter to cut out circles and transfer them to a baking sheet lined with parchment paper.
  • Making the indentation: Make a small indentation in the center of each circle – using a wooden spoon or a teaspoon is ideal. Cover with a cloth and let rise while the oven preheats (about 20 minutes).
  • Baking: Bake the doughnuts in a preheated oven at 190 °C for approximately 10–15 minutes, until their surfaces are nicely golden.
  • Finishing: After baking, brush the doughnuts with melted butter and fill the prepared indentations with jam or marmalade. Finally, dust with powdered sugar and serve.
