Preparation procedure

  • Preparation of the base: Beat the eggs with the granulated sugar and vanilla sugar until pale and fluffy. Add the lemon zest, sifted flour and baking powder, mix. Pour the batter onto a baking tray lined with baking paper and bake in an oven preheated to 180 °C (fan 160 °C) for 20 minutes. After baking, remove the base and let it cool completely.
  • Preparation of the cream: Whip the whipping cream to stiff peaks, then fold it together with the sour cream using a spatula and sweeten with granulated sugar to taste. Spread the cream over the cooled base and smooth it. Arrange the drained mandarins on the cream.
  • Preparation of the jelly: Pour 750 ml of liquid (juice + water) into a pot, add the sugar and bring to a boil. Mix the pudding powder in a little cold water and stir into the boiling liquid. Cook, stirring constantly, for 2–3 minutes until thickened. Carefully pour the slightly cooled jelly over the layer of mandarins.
  • Chilling and serving: Cover the dessert with cling film and refrigerate for at least 4 hours (ideally overnight). Before serving, cut into 12–16 portions and serve chilled.
