Ingredients

Preparation procedure

  • Preparing the meat Lightly pound the slices of pork roast, then salt and pepper both sides.
  • Yogurt marinade In a bowl, mix the plain yogurt with olive oil, pressed garlic and oregano. Season with salt and pepper.
  • Marinating Thoroughly coat the meat in the marinade, transfer to a sealable container and leave in the refrigerator for at least 2 hours, ideally overnight.
  • Breading the cutlets Remove the meat from the marinade and let the excess yogurt drip off slightly. First coat the slices in egg, then in breadcrumbs.
  • Frying Melt the lard in a pan so the meat can float in the fat. Fry the cutlets over medium heat for 3–5 minutes on each side, until golden, crispy and cooked through.
  • Draining excess fat Transfer the fried cutlets to a plate lined with paper towels to absorb the excess fat.
  • Serving Serve immediately with mashed potatoes, boiled potatoes or a vegetable salad.
