  • Preparing the dough In a bowl mix the flour, powdered sugar and baking powder. Add the egg yolks and softened butter. Begin working the dough, then pour in the lukewarm milk and work it into a smooth, semi-firm dough.
  • Preparing the bottom layer Grease a 30 × 40 cm baking tray with butter and dust with flour. Spread the dough evenly over the entire surface and smooth it.
  • Jam layer Carefully spread a thin layer of currant or apricot jam over the dough. A thinner jam is ideal because it spreads more easily.
  • Nut filling Whip the egg whites and a pinch of salt into a soft meringue. Then beat in the powdered sugar spoon by spoon until a stiff, glossy meringue forms. Finally, gently fold in the ground walnuts.
  • Finishing before baking Spread the nut mixture evenly over the jam layer and gently smooth it.
  • Baking Bake in an oven preheated to 180 °C for approximately 15–20 minutes, until the surface turns golden.
  • Serving Let the cake cool completely, then cut into slices and serve.
