Zucchini in the batter is barely noticeable, yet it adds moisture and saves fat. You can mix this quick chocolate zucchini cake in a few minutes – the oven does the rest. An ideal dessert for the weekend or just with coffee.

Preparation procedure

  • Preheat the oven to 180 °C (smaller tray 170 °C). Line the baking sheet with parchment paper.
  • Mix the dry ingredients: flour, cocoa, baking powder, cinnamon (and optionally nuts or raisins).
  • Liquid base: in a bowl whisk the eggs with the powdered sugar, add the oil and vanilla sugar.
  • Add the zucchini and mix. Add the dry ingredients and stir just until combined.
  • Bake for 30 minutes (or longer at a lower temperature if you have a thicker layer of batter). Test with a skewer to make sure the cake is baked through.
  • Finish the flavor: spread jam over the still-warm cake base. Melt the chocolate, stir in the sour cream and pour over the cake. Let it set.
