  • Preparation of the dough: Roll out the puff pastry on a lightly floured surface into a rectangle about 45 × 32 cm. Roll out the second sheet the same way. Using a pastry wheel, cut 15 strips sized 3 × 32 cm. In total you will obtain 30 strips.
  • Shaping: Wrap each strip of dough around a metal tube so that the individual edges slightly overlap. Arrange the tubes on a baking sheet lined with parchment paper, keeping enough space between them. Brush them with the beaten egg.
  • Baking: Bake in an oven preheated to 200 °C for about 15 minutes, until the tubes turn golden. After baking, remove them from the molds and let cool.
  • Preparation of the meringue filling: Put 300 g of sugar into a saucepan, pour in the water and boil for about 5 minutes until a thicker syrup forms (thread test). Meanwhile, whip the egg whites with 200 g of sugar to stiff peaks. Slowly pour the hot syrup into the meringue while whipping, until a firm and thick foam forms.
  • Filling: Pipe the meringue cream into the cooled tubes from both ends with a pastry bag so that they are full.
  • Finishing: You can lightly dust the finished šamrole with powdered sugar.
