Traditional Moravian kolaches with quark and plum jam are among the most popular sweet pastries in Czech cuisine. Preparation procedure

  • Preparing the yeast starter and dough: In a mug, mix the yeast with the sugar and lukewarm milk. Let it rise in a warm place. Meanwhile, whip the softened butter with the powdered and vanilla sugar and the egg yolks. Whip the cream until stiff. In a bowl, mix the flour and salt, add the butter mixture, the starter and the whipped cream. Knead into a smooth dough and let it rise for 45 minutes.
  • Fillings and streusel: For the quark filling, mix the quark, egg, sugar, vanilla sugar, lemon zest, flour and raisins. Mix the plum jam with the rum and cinnamon. Prepare the streusel by mixing all ingredients until crumbly.
  • Shaping the kolaches: Briefly work the risen dough and roll it out into a sheet about 5 mm thick. Cut it into squares (about 25 pcs). Put the quark filling in the center of each and wrap into a ball. Place them seam-side down on a baking sheet lined with parchment paper. Make a depression in the middle of each koláč and fill it with the plum jam filling.
  • Finishing and baking: Brush the kolaches with beaten egg, sprinkle with streusel and let them rise for another 10 minutes. Bake in a preheated oven at 180 °C for approximately 20 minutes until golden.
