Preparation procedure

  • Make a sponge from the sugar, warm water and yeast and let it rise – yes, even though it's dried yeast.
  • Mix the flour with the salt, add the sponge and the oil.
  • Work into a smooth, supple dough. Let it rise in a warm place.
  • Let the dough rise until it doubles in volume – about 1 hour.
  • Then shape two baguettes on a floured baking sheet. Cover again and let rise for another half hour.
  • Meanwhile preheat the oven to 220°C.
  • Uncover the baguettes and make diagonal slashes on each about halfway through.
  • Open the hot oven and place a container on the bottom, into which pour about a quarter cup of water.
  • Put the baking sheet with the baguettes into the oven and quickly close it so the steam doesn't escape.
  • Bake for about 20 minutes until golden.

These baguettes are absolutely simple and truly excellent. You can quickly make them whenever you feel like it.

The dough is simple and easy to work with.

From the same dough I also baked a smaller loaf of bread.
