Preparation procedure

  • Preparing the dough: In a bowl, mix the flour, baking powder and a pinch of salt. Add the butter and work it into the dry mixture with your hands until a crumbly texture forms. Then add the sugar, egg yolks and gradually the sour cream until a soft, non-sticky dough forms. Divide the dough into two halves and let it rest in the refrigerator for 15–20 minutes.
  • Preparing the filling: Peel the apples, coarsely grate them and squeeze out the excess juice. Add sugar and ground cinnamon to taste.
  • Assembling the pie: Roll out the first half of the dough and place it on a baking tray lined with parchment paper. Sprinkle the surface with a thin layer of semolina, which will absorb the excess apple juice. Evenly spread the prepared apples over the dough and lightly sprinkle semolina again. Roll out the second half of the dough and place it on top of the pie. Brush the surface with beaten egg and prick with a fork so steam can escape during baking.
  • Baking: Place the pie in a preheated oven and bake at 180 °C for about 30–35 minutes, until it turns golden.
