- Cooling: After cooking, remove the potatoes from the water and let them cool. Then cut a not-too-deep grid into them with a knife. This step will help achieve better crispiness when baking.
- Chilling in the fridge: Place the potatoes in the refrigerator for 1 hour. This step is important for achieving the perfect texture.
- Preparation for baking: Coat the baking sheet with half of the oil, place the potatoes on it and apply the remaining oil to their tops.
