Preparation procedure

  • Base: Blitz the biscuits into fine crumbs. Melt the butter and stir into the biscuit crumbs. Line the bottom of a 26 cm diameter springform pan with baking paper, press the mixture into an even layer and chill for 60 minutes.
  • Gelatin: Prepare according to the package instructions (soak and dissolve sheets, swell and heat powdered). Let cool until lukewarm.
  • Cream: Whip the quark with the powdered sugar until smooth. Whip the cream to soft peaks and fold into the quark with a spatula. Stir in the lemon juice. While stirring continuously, pour the lukewarm gelatin in a thin stream.
  • Filling: Spread the cream over the chilled biscuit base, smooth the surface and chill for at least 60–90 minutes to allow the cream to set.
  • Strawberries and jelly: Slice the strawberries and arrange them on the set cream. Prepare the strawberry cake jelly exactly according to the package instructions and, after it has cooled slightly, pour it over the strawberries in a thin layer. Let it set in the refrigerator for at least 60 minutes.
  • Serving: Carefully remove the ring of the pan, cut the cake with a sharp knife warmed in hot water and dried.
