If you love coconut desserts, you’ll adore this no-bake Raffaello cake. It’s quick, simple and delicious. The delicate cream with condensed milk and whipping cream combined with ladyfingers creates a moist dessert that literally melts in your mouth.

Preparation procedure

  • Preparing the gelatin – Let the gelatin swell in water (add only enough water to cover it).
  • Cream base – Heat the milk in a pot, add the coconut, remove from the heat and let cool.
  • Cream mixture – In a bowl, mix the condensed milk with the whipping cream, add the cooled coconut milk and stir well.
  • Adding the gelatin – Dissolve the gelatin in a bain-marie or in the microwave and stir it into the cream. Let cool for a few minutes.
  • Assembling the layer – In a cake pan lined with foil place a layer of ladyfingers soaked in the sweetened milk, spread half of the cream over them.
  • Additional layers – Add a second layer of ladyfingers, spread with the remaining cream and finish with a third layer of ladyfingers.
  • Chilling – Wrap the dessert tightly in foil and leave in the refrigerator for at least 6 hours (preferably overnight), until the cream sets and the ladyfingers soften.
  • Finishing – Whip the cream with the vanilla sugar until stiff, spread over the top of the dessert and sprinkle with grated coconut. You can decorate with Raffaello balls.
