This no-bake raspberry dessert relies on the natural sweetness of the fruit and banana, a smooth quark-and-cream filling and layers of soaked biscuits. You can prepare it in no time; the fridge does the rest.

Preparation procedure

  • Prepare the fruit Rinse the raspberries, toss with lemon juice and set aside. Rinse the blackcurrants and let drain.
  • Whip the cream Whip the whipping cream to stiff peaks. Fold in the quark and sour cream. Add the mashed banana and, if desired, a small amount of honey – taste and adjust the sweetness.
  • Assembling the dessert Line the bottom of the pan with a layer of biscuits and lightly drizzle them with juice, coffee, or rum (do not soak). Spread part of the cream, sprinkle with blackcurrants or other fruit. Repeat with biscuits + drizzle, cream. The final layer should be cream.
  • Finishing Arrange the remaining raspberries on top, sprinkle with chocolate flakes or a biscuit crumble. Cover with foil and refrigerate for 2–3 hours (ideally overnight) to chill and set.
  • Serving Cut into slices with a sharp knife. Serve plain or with whipped cream or ice cream.
