Cream:

2 eggs
160–180 g granulated sugar
1 packet vanilla sugar
60 g corn starch
800 ml milk
250 ml whipping cream

200 ml whipping cream
200 g dark or milk chocolate

Preparation procedure

Preparation of the pudding cream: In a bowl, beat the eggs with the sugar, vanilla sugar and starch into a smooth foam. Gradually pour in about 200 ml of milk so that a smooth, lump-free paste forms.
Cooking the cream: Transfer the mixture to a pot, add the remaining 600 ml of milk and cook over low heat, stirring constantly, until the cream thickens. Cook until it becomes a thick pudding. Cover the hot cream with cling film (to prevent a skin from forming) and let it cool completely.
Mixing with the whipped cream: Gently whip the cooled pudding, then fold in 250 ml of whipping cream (remember to whip the cream until stiff first). The whipped cream filling should be smooth and fluffy.
Layering in the pan: Line a pan (25×35 cm) with baking paper. Place a layer of cookies on the bottom. You can briefly dip the cookies in water or tea. Spread a layer of cream over them, and continue with another layer of cookies and cream, until the cookies and cream are used up. The top layer must be creamy.
