Prepare a great way to preserve homegrown tomatoes with herbs for a long time and enjoy their excellent taste even in winter. This simple recipe for pickled tomatoes is full of flavor and can be a perfect complement to salads or main dishes.

Preparation procedure

  • Preparing the vegetables: Slice the tomatoes and onions. Wash the parsley and dill. You can either chop them into larger pieces or leave them whole.
  • Filling the jars: In sterilized jars, layer the onions, tomatoes, and herbs alternately. The last layer should be onion and should end about 1.5 cm below the rim of the jar.
  • Preparing the brine: Bring the sugar, salt, oil, and vinegar to a boil in the water. Pour the hot brine into the jars so that all the vegetables are submerged.
  • Sealing and storage: Close the jars tightly, turn them upside down, and wrap them in a blanket to cool slowly. After cooling, store the jars in a dark, cool place.

These deliciously pickled tomatoes will be a great addition to your pantry and will delight you with their flavor long after the harvest.
