These doughnuts are simply perfect – finally just the way I have always wanted to make them. Delicate, delicious and excellent even the next day – if any are left for you (in our case that only happened once, and that was because my husband forgot about them). Even my mother-in-law asked me for the recipe!

Preparation procedure
- Make a sponge from 200 ml of warm milk, the yeast, sugar and a little flour and let it rise for about 10 minutes.
- From the remaining flour you can set aside 4 level tablespoons of flour for dusting. Into the rest of the flour add the salt and sugar, mix, then add the sponge, yolks, cream, rum and the remaining milk.
- Mix — the dough will be quite runny, but kneading will give it a different consistency.
- The dough will be rather loose after kneading, but there's no need to worry. Finish mixing it with a wooden spoon.
- Lightly flour the dough (with the flour you set aside) — cover with a cloth and leave to rise in a warmer place for at least 1 hour up to 90 minutes.
- Transfer the dough to a floured board. On the floured board sprinkle a little more flour on the dough and turn it over.
- Divide the dough into two halves, lightly dust with flour on the other side as well and roll out to a thickness of about 0.5 cm.
- The dough is perfect — it doesn't stick; cut out circles (you can make a small indent on top with your finger and fill it later), or other shapes — an oiled glass is ideal. You can make the second batch diamond-shaped with a slit in the middle — it's up to you.
- Fry in oil until golden brown.
