  • Parisian cream (requires resting overnight) Pour the whipping cream into a pot, add the sugar and cocoa. Bring to a boil while stirring constantly and simmer briefly (approx. 1 minute). Let cool completely and refrigerate for at least 6 hours, ideally overnight. The next day, whip into a firm cream.
  • Nut layer Dissolve the sugar in a little boiled water to create a thick syrup. Add the rum and ground nuts. The mixture should be thick but easily spreadable.
  • Assembling the dessert Spread the nut layer evenly over the baked base. Layer the whipped Parisian cream on top. Sprinkle the surface with grated chocolate or coat with glaze. Chill in the refrigerator for at least 1–2 hours to set.
