Traditional nut bars with a pudding-and-egg-yolk cream bring the scent of a wood‑heated cottage and the taste of farm-fresh eggs regardless of the season. Originally baked for Easter, they will, however, become a great addition to any afternoon gathering or festive table.

Preparation procedure

  • Dough preparation In a bowl, mix the flour, powdered sugar and salt. Add the cold butter and work it with your fingers into a crumbly texture. Stir in the egg and quickly knead into a smooth dough. Wrap in cling film and let rest in the refrigerator for 30 minutes.
  • Baking the base and nut layer Preheat the oven to 180 °C (convection 160 °C). Roll the dough into a rectangle (approx. 25 × 30 cm) and transfer to a baking tray lined with parchment paper. Evenly sprinkle the nuts mixed with sugar and press lightly. Bake for 12–15 minutes until golden.
  • Pudding cream Bring the milk to a boil with 40 g of sugar. In a bowl, whisk the egg yolks, the remaining sugar and the pudding powder. Gradually stir a little of the hot milk into the egg mixture, return everything to the saucepan and cook over low heat until the cream thickens. Let it cool slightly and stir in the butter.
  • Assembling the bars Spread the warm cream over the baked base. Let the bars cool first at room temperature, then rest in the refrigerator for 2 hours.
  • Preparing the glaze Sift the powdered sugar, add the lemon juice and hot water until a smooth, pourable consistency is achieved. Spread the glaze over the chilled cream and let it set.
  • Cutting and serving Cut into rectangles approximately 4 × 6 cm. Serve chilled or even slightly warm, when the cream is wonderfully soft from the butter.
