Preparation procedure

  • Preparing the dough Sift the flour with the baking powder and sugar into a bowl. Add the margarine cut into pieces and use your fingers to create a crumble. Then gradually work in the yolks and knead into a smooth dough. Divide it into two halves – put one in the refrigerator for 30 minutes, the other into the freezer.
  • Nut filling In a bowl, mix the ground walnuts, sugar and a few drops of rum essence.
  • Quark filling Whip the egg whites into stiff peaks. Gradually add the sugar and vanilla sugar, then fold in the quark and flour. Mix everything well to form a smooth, airy cream.
  • Assembling the cake Grease the baking sheet and dust it with flour. Remove the first part of the dough from the fridge and roll it out to the size of the sheet. Place it on the bottom of the pan and even it out. Spread the nut filling over the dough and then the quark mixture. Grate the second part of the dough from the freezer over the top of the cake to create a crumbly layer.
  • Baking Bake in a preheated oven at 180 °C for about 35 minutes, until the cake turns golden. After baking, let it cool completely, ideally in the refrigerator, and before serving dust with powdered sugar.
