- Preparation: Separate the yolks from the whites. Put the whites in the refrigerator. Preheat the oven to 170 °C. Melt 120 g of chocolate over a double boiler.
- Mixing the ingredients: After the melted chocolate has cooled, stir it into the cream cheese until combined. Add the yolks and thoroughly mix the mixture with a wooden spoon. Take the egg whites out of the fridge and beat them until a white foam begins to form on the surface.
- Preparing the pan: Grease a pan with a diameter of 15 cm. Pour the batter into it. Lift the filled pan above the counter and gently drop it down to remove air bubbles.
- Baking: Heat water in a larger pan and place the pan with the batter into it. Bake for 15 minutes at 170 °C, then reduce the temperature to 160 °C and bake for another 15 minutes. After the time has passed, turn off the oven and leave the cake in the oven for another 15 minutes.
- Finishing: Remove the cheesecake from the oven and let it cool. For a professional look, dust the surface with powdered sugar.
