Preparation procedure
- Preheat the oven to 250 degrees.
- Place half of the cookies into a food processor. Blend until crumbs form, add the melted butter and blend again until the cookies and butter come together.
- Spread this mixture evenly onto a pan (preferably round), which we line with parchment paper.
- Bake in the oven for 5 minutes, remove and let cool.
- Mix the strawberries in a pot with 1 tbsp sugar and 1 tbsp water.
- Bring to a boil, cover and simmer for 10 minutes until soft. Stir occasionally.
- Combine the lemon juice with the cornstarch and, stirring constantly, add to the strawberry mixture and simmer for another 1 minute, until the mixture thickens.
- Place the strawberry mixture into a food processor and blend until smooth.
- Beat the quark, sour cream, the remaining sugar, vanilla extract and egg in a food processor.
- Blend until smooth, spread onto the prepared crust.
- Add the prepared strawberry mixture and bake at 180 degrees for 35 minutes or until the cake is slightly jiggly.
- Remove from the oven and let cool on a rack. Crush the remaining cookies and sprinkle over the top of the cake. Gently press down.
- Refrigerate until set (approx. 3 hours).
- Remove, slice the cheesecake and serve.
