Preparation procedure
- Preparing the potato dough: Peel the potatoes cooked in their skins and grate them on a fine grater. Add the semolina, coarse flour, breadcrumbs, and beaten eggs. Work into a uniform dough that does not stick and is easy to handle.
- Shaping the dumplings: Transfer the dough to a floured work surface and roll into a sheet about 1 cm thick. Cut the sheet into individual squares or rectangles.
- Preparing the filling: Chop the onion finely and sauté it in oil until golden. Add the chopped bacon or smoked meat and fry together for a while. Let the filling cool.
- Filling the dumplings: Place the prepared filling in the center of each dough square. Wrap the dough and form firm balls or oblong shapes.
- Cooking: Place the dumplings into boiling salted water and cook for approximately 10 minutes. Cooking time depends on the size of the dumplings. Dumplings are done when they float to the surface.
- Serving: Serve the dumplings with fried onions and braised cabbage.
