Do you have leftover apples and want a quick dessert? These yogurt apple pancakes can be made from a few common ingredients. Thanks to the yogurt they are wonderfully tender and thanks to the grated apple pleasantly moist. Great with coffee, for breakfast or for unexpected guests.

Preparation procedure

  • Batter In a bowl, mix the flour, baking powder and a pinch of salt. In another bowl, whisk the egg with the sugar, add the yogurt and mix. Pour the wet mixture into the dry ingredients and briefly combine into a smooth batter.
  • Apple Lightly squeeze the coarsely grated apple to remove excess juice and gently fold it into the batter. (If you like, add a pinch of cinnamon.)
  • Frying Heat a pan with a thin layer of oil or butter over medium heat. Use a spoon to form small pancakes, fry 1–2 minutes on each side until golden. Place finished ones on a paper towel.
  • Serving Serve warm – with honey, jam, sour cream or fresh fruit.
