Preparation procedure

  • Dough Whisk the egg whites with the sugar over a double boiler until stiff, glossy peaks (approx. 8–10 min). Gently fold in the mixture of ground nuts, flour and baking powder. Pipe crescent shapes onto a baking sheet lined with parchment using a piping bag.
  • Drying and pre-baking Place the crescents in an oven heated to 90–100 °C and dry for 1 hour. After the time has elapsed, increase the temperature to 120 °C and dry for another 20–30 min, until the crescents are dry and firm to the touch.
  • Rum filling Whisk the egg yolks with the sugar over a double boiler until a golden, thick consistency. In another bowl, cream the butter with the vanilla sugar and rum until smooth. Combine both mixtures, add the cocoa and mix well until a creamy filling forms.
  • Filling and glazing Fill the cooled crescents with the prepared filling using a piping bag. Melt the chocolate together with the hardened fat over a double boiler. Dip each crescent into the glaze and let drain.
  • Chilling and serving Let the glazed crescents rest for at least 15 min to allow the glaze to set. Serve with coffee or tea.
