Preparation procedure

  • We begin by preparing the cream. Whisk the eggs with the sugar over a water bath and heat for about 5 minutes, until the mixture reaches approximately 70 °C. Then whisk until foamy, add the cocoa and the softened butter, and whisk into a smooth cream. Place the cream in the refrigerator and let cool.
  • Whisk the egg whites into stiff peaks. Gradually add the sugar and whisk until glossy. Finally, gently fold in the ground hazelnuts. Transfer the batter into a piping bag and pipe small crescents onto a baking sheet lined with parchment paper. Bake at 210 °C for about 5 minutes, then slightly open the oven door and let dry for another 10 minutes. Let cool.
  • Fill a piping bag with the chilled cream and pipe a decorative cream topping on each crescent. Then return the crescents to the refrigerator.
  • Melt the chocolate with the coconut oil over a double boiler and mix well. Dip the set crescents into the glaze one by one and let harden.
