  • Preparing the starter: Make a starter from 200 ml warm milk, the yeast, sugar and a little flour. Let it rise for about 10 minutes, until it begins to foam.
  • Preparing the dough: Put the flour into a large bowl (reserve about 4 tablespoons for dusting), add the salt and sugar. Then stir in the starter, yolks, cream, rum and the remaining milk. Work the dough – at first it will be loose, but with gradual stirring and kneading it will gain an elastic and smooth consistency.
  • Proofing: Lightly dust the dough with flour, cover with a clean cloth and let rise in a warm place for at least 60–90 minutes, until it doubles in volume.
  • Shaping the donuts: Transfer the risen dough to a floured work surface, divide it into two parts and roll each into a sheet about 0.5 cm thick. Cut out circles (for example with a glass) or diamond shapes with a slit.
  • Frying: Fry the donuts in hot oil on both sides until golden. After frying, let them drain on paper towels.
  • Finishing: Serve sprinkled with powdered sugar, filled with jam, or with a bit of yogurt or beaten egg whites.
