This timeless classic dessert delights children and adults: delicate, fluffy yeasted buns that you brush with butter after baking and serve with vanilla sauce (šodó). The process is simple — just keep an eye on the starter, the rising and the correct oven temperature.

Preparation procedure

  • Starter: Crumble the yeast into 100 ml lukewarm milk, add a teaspoon of sugar, stir and leave to rise for 10–15 minutes.
  • Making the dough: Put the flour, the remaining sugar, salt and lemon zest into a bowl. Add the yolks, the risen starter, the remaining milk and the softened butter. Knead for 8–10 minutes until a smooth, elastic and slightly sticky dough forms. Cover and let rise for 60 minutes.
  • Shaping the buns: Briefly mix the risen dough, roll it into a log and cut into small pieces (approx. 3 × 3 cm). Quickly shape the pieces into buns. Grease the baking dish with butter, place the buns in it close together and lightly brush them with melted butter. Let rise for 15 minutes.
  • Baking: Preheat the oven to 170 °C (conventional heat). Bake for 18–22 minutes until golden. While still hot, lightly brush the buns with melted butter.
  • Quick sauce (šodó style): Cook a thicker sauce from the milk, pudding mix and sugar. Remove from the heat, stir in the cream and sweeten to taste. Serve warm.

Tips for guaranteed results

  • Knead the dough long enough – well-developed dough rises better and is fluffy.

  • Placing the buns close together will ensure after baking nice ‘tear-apart’ edges.

  • For a more festive version add a teaspoon of vanilla sugar to the dough or a handful of raisins (pre-soaked in a little rum).

Serve the buns still warm with a generous helping of vanilla sauce. They are also good lightly dusted with sugar and with the addition of a teaspoon of sour cream for a contrast of flavors.
