This recipe uses a few basic ingredients yet offers a real treat that will disappear before you can say „treating“.

  • Preparing the pudding In a small saucepan, mix the vanilla pudding powder with a tablespoon of sugar and 100 ml of cold milk. Bring the remaining milk to a boil, then pour in the pudding mixture and, stirring constantly, cook for 1–2 minutes until the pudding thickens. Cover the hot pudding with cling film directly on the surface (this prevents a skin from forming) and let cool for 10–15 minutes. Then beat the pudding until smooth.
  • Shaping the pockets Roll out the puff pastry on a lightly floured surface to a thickness of about 3 mm. Using a knife or a cutter, cut large squares (approx. 10 × 10 cm). Place a tablespoon of cooled pudding and a teaspoon of jam in the center of each square.
  • Sealing and brushing Fold the squares in half, firmly seal the corners with a fork or your fingers. In a bowl, beat the egg yolk with a tablespoon of milk and brush the pockets with this mixture – they will get a beautiful golden color.
  • Baking Preheat the oven to 180 °C (fan 160 °C). Arrange the pockets on a baking sheet lined with parchment paper and bake for 15–20 minutes, until golden and puffed.
  • Finishing After removing from the oven, let them cool briefly, then transfer to a serving plate and dust with icing sugar. Serve warm or lukewarm.
