This poppy seed–almond dessert is the ideal combination of a fluffy base, delicate pudding cream and sweet white chocolate. A great choice for any occasion, whether you have a family celebration or just want something special for an ordinary day.

Preparation procedure
- Preparation of the poppy seed base: Divide the ingredients for the batter in half and bake in two separate pans. If you bake one large base and want to slice it, extend the baking time. First whip the egg whites into a stiff foam and gradually add the sugar while whipping. Once the mixture is glossy, gradually add the yolks. Finally gently fold in the poppy seeds, coconut flakes and ground almonds. Spread the batter evenly on a baking sheet lined with parchment paper and bake in a preheated oven at 170 °C for approximately 20 minutes. Then let the base cool.
- Preparation of the pudding cream: Cook 200 ml of milk with the sugar and vanilla sugar. Mix the remaining milk with the yolks and pudding powder and pour this mixture into the boiling milk (remove the milk from the heat). Heat again and stir until a thick pudding forms. Let cool. Beat the butter into a foam and gradually beat the pudding and lemon zest into it.
- Assembling the dessert: Drizzle the base with the mixture of lemon juice and boiled water. Spread a layer of pudding cream on one base and cover with the second base.
- Glaze: Melt the white chocolate with the butter and milk in a saucepan. Pour over the top of the dessert and let cool in the refrigerator.
