Preparation procedure
- Dough preparation: First prepare the yeast starter: mix the yeast with a little lukewarm water and sugar and let it rise in a warm place, which takes about 30 minutes. Put the flour into a large bowl, add the egg yolks, sugar, milk and finally the starter. Mix all the ingredients thoroughly and work into a smooth dough. Let the dough rise in a warm place for about 30 minutes, until it doubles in volume.
- Preparation of the poppy-seed filling: In a small saucepan, boil the water with the sugar to a syrupy consistency. Add the rum and lemon zest and let it cook briefly. Slowly add the ground poppy seeds and stir until a thick, smooth filling forms. Remove from the heat and let cool.
- Preparation of the walnut filling: The procedure is the same as for the poppy-seed filling: boil the water with the sugar, add the rum and lemon zest. Slowly add the ground walnuts and stir to the desired consistency. Let cool.
- Shaping the rolls: Divide the risen dough into four parts – two for the poppy-seed rolls and two for the walnut rolls. Roll each portion of dough into a flat round and spread with the prepared filling. Then roll the dough into a log/roll. Transfer the rolls to a baking sheet lined with parchment paper, brush them with the beaten egg.
- Baking: Preheat the oven to 160 °C and bake the rolls for about 45 minutes, until golden brown.
