  • Marinating the meat: Cut the pork leg into thin strips. Salt, pepper and mix with 3 tablespoons of oil. Place the meat in a sealable container and let marinate in the refrigerator for at least 24 hours, ideally 48 hours.
  • Browning the meat: In a hot pan, sear the marinated meat quickly so it browns on the outside and stays juicy. Then remove the meat from the pan and set aside.
  • Sauce base: In the same pan add the chopped onion and the kapia cut into strips. Sauté for about 10 minutes until golden and tender.
  • Combining flavors: Add the browned meat back to the pan, pour in the soy sauce and ketchup. Mix everything well and simmer covered for another 10 minutes.
  • Seasoning: Finally add the hot pepper sliced into rings and the pickled cucumber finely chopped. Mix again and simmer for the last 10 minutes to let the flavors meld.
