Potato lokše served sweet are a great way to use up leftover boiled potatoes. The tender dough, crispy edge and sweet plum jam with poppy seeds create a delicious combination you’ll fall in love with from the first bite.

Preparation procedure

  • Preparing the potatoes Peel the boiled potatoes and grate them finely. Leave them in a bowl for a while (allow to cool or rest until the next day).
  • Dough Add the all-purpose flour and a pinch of salt to the grated potatoes. Work into a smooth, non-sticky dough. If the dough is too dry, add a tablespoon of water.
  • Shaping the lokše Divide the dough into a roll about 4 cm in diameter. Cut into about 16 equal pieces. Flatten and press each piece by hand, then roll out into a thin round about 20 cm in diameter.
  • Cooking Heat a dry pan over medium heat. Cook the lokše in it for 1–2 minutes on each side, until golden spots appear on the surface. Place the finished lokše on a plate and cover with a cloth to keep them soft.
  • Finishing Brush the baked lokše with melted butter, spread a layer of plum jam, sprinkle with powdered sugar and ground poppy seeds. Stack them and serve warm.
