Preparation procedure

  • Batter for the pancakes Peel the potatoes and grate them finely. Squeeze out the excess liquid, add the eggs, garlic, marjoram, salt, pepper and gradually work the flour in until you have a compact yet still moist mixture.
  • Frying the pancakes Heat a thin layer of oil in a pan. Form medium-thick pancakes from the batter and fry on both sides until golden. Place the finished pancakes on a paper towel and keep warm (oven 80–90 °C).
  • Chicken sauté – base Heat oil in a pan, add the onion and sauté until golden. Stir in the garlic, briefly fry and add the strips of chicken. Season with salt and pepper and sear quickly to seal.
  • Finishing the sauté Add the ketchup, corn (or mushrooms/beans), add a splash of water or stock and simmer for 5–7 minutes until juicy. Adjust salt and pepper to taste.
  • Serving Put a pancake on a plate, pile on the hot chicken sauté, sprinkle with grated cheese which will pleasantly melt on the warm sauté. Garnish with herbs.

Tips and variations

  • If the batter is thin, add a little flour; if it’s dense, loosen it with a spoonful of milk.

  • You can gratinate the cheese: put the finished portions under the grill for 2–3 minutes.

  • A spicy version works great with a bit of chili or smoked paprika in the sauté.

Conclusion

Potato pancakes with chicken sauté are quick, filling and versatile. The combination of a crispy pancake, juicy meat and melted cheese scores with the whole family. Prepare a double batch of pancakes right away – they’ll disappear faster than you can refill the plates.
