Preparation procedure

  • Preparing the batter (10 min) In a bowl, whisk the eggs with the sugar until a thick white foam. Add the sour cream, melted butter and (if you want) the vanilla paste and rum. Sift the flour with the baking powder and a pinch of salt and alternately fold it into the egg mixture. Mix the batter until smooth and pourable.
  • Preparing the crumble and fruit (5 min) Mix the flour, sugar and cold butter by hand until a crumbly mixture forms. Put it in the fridge for a while. Wash the fruit, cut it and let it drain.
  • Layering and baking (30 min) Grease a baking tray (30 × 40 cm) with butter and dust with coarse flour. Pour the batter evenly into the tray and smooth the surface. Arrange the plums and strawberries on the batter so they don't sink into the sides. Sprinkle with the well-chilled crumble (optionally add chopped almonds). Bake in an oven preheated to 180 °C (convection 160 °C) for 30 minutes, until the surface is golden and a skewer inserted comes out dry.
