Ingredients: 4 eggs; 200 g granulated sugar; 1 packet vanilla sugar; 100 ml milk; 100 ml oil; 250 g all-purpose flour; 1 baking powder; 3 tablespoons cocoa; 500 g quark (preferably in a tub); 3 tablespoons powdered sugar; 3 packets vanilla sugar; 150–200 ml whipping cream; 1 whipping cream stabilizer; 200 ml whipping cream; 100–200 g cooking chocolate (to taste)

Preparation procedure

Preparing the batter: Beat the egg yolks with the sugar and vanilla sugar until foamy. Gradually add the milk and oil. Beat the egg whites into stiff peaks. In a separate bowl, mix the flour, cocoa and baking powder and fold this mixture into the yolk mixture. Finally, gently fold in the egg white foam. Pour the batter onto a greased and floured baking sheet and bake at 180 °C for 20–25 minutes. Let cool.
Preparing the cream: Beat the quark with the powdered and vanilla sugar. Add the cream (according to desired consistency so the cream is not too runny) and the whipping cream stabilizer. Spread the cream evenly over the cooled cake base and let it set in the refrigerator for at least 30 minutes.
Chocolate glaze: Heat the cream, add the chopped chocolate and melt while stirring constantly. Let it cool slightly, but pour the still-liquid glaze over the set cream.
Chilling and serving: Let the finished dessert rest, ideally overnight. Cut with a serrated knife that you dip in hot water and wipe after each cut.
