Puffed egg-yolk cookies are among the forgotten Christmas treasures that deserve a place on our festive table once again. They are made from just four basic ingredients, but the result is literally perfect – light, airy and sweet cookies that keep their shape and “rise” beautifully during baking. Thanks to the simple preparation it’s ideal even for those who don’t have much time but want a table full of homemade treats.

Preparation procedure

  • The day before: Whip the yolks with 150 g of powdered sugar and a teaspoon of ammonia. This mixture must rest in the refrigerator overnight so the dough becomes nicely aerated and the cookies rise during baking.
  • The next day: Add the remaining 150 g of powdered sugar and the plain flour to the chilled mixture. Work into a smooth dough and roll it out to a 2–3 mm thick sheet. Cut out various shapes from the dough – stars, hearts, snowflakes or bells.
  • Baking: Transfer the cookies to a baking sheet lined with baking paper and dry in the oven at 150 °C for about 10 minutes, until they rise nicely and easily separate from the paper. Every oven bakes differently, so it's better to check them while baking.
  • Finishing: Let the finished cookies cool. You can serve them immediately because they are delicate and fragile right after baking. If you wish, they can be decorated with melted chocolate, but they taste excellent on their own without decoration.
