Delicious quark cake without crust, in which three exceptional flavors marry – cocoa, poppy seed and a delicate gelatin layer. You’ll fall in love with this dessert at the first bite. It’s simple to make, but the result looks like it’s from a patisserie.

Preparation procedure

  • Cream preparation: Place the quark, sugar, vanilla sugar, yolks, sour cream and melted butter into a large bowl. Beat everything into a smooth cream. Then add the potato starch and semolina, mix well.
  • Egg white foam: Whip the egg whites into stiff peaks and gently fold them into the quark mixture. The mixture will be beautifully airy.
  • Dividing into three layers: Divide the batter into three equal parts. Stir gelatin into one, ground poppy seeds into the second, and quality cocoa into the third. You will get three contrasting layers with different flavors and colors.
  • Assembling the cake: Line the pan with baking paper, lightly grease it with butter and dust with flour. Pour the cocoa portion onto the bottom, then the poppy-seed one (here you can add candied fruit), and on top the layer with gelatin. Smooth the surface.
  • Baking: Put into a preheated oven at 180 °C and bake for about 60 minutes, until the cake sets and turns lightly golden.
  • Finishing: After cooling you can drizzle the cake with melted chocolate or decorate as you like. Before serving let it rest briefly in the refrigerator.
